Crunchy Mandarin-Cashew Salad
Ingredients:
- 2 cups Romaine, or more
- 1 cup mushroom, sliced
- 1 red onion, sliced and separated into rings
- 1/2 to 3/4 cup cauliflower flowerettes
- 1 rib celery, sliced diagonally
- 1 can mandarin orange slices, well drained
- 1/2 cup cashews
Preparation:
- Chill chopped vegetables. Add orange sections and cashews just before serving. Top with a good brand of Italian dressing.
