Lemony Mushrooms
Ingredients:
- 5 tablespoons lemon juice
- 5 tablespoons water
- 1 bay leaf
- 1/2 teaspoon salt
- 1/2 teaspoon tarragon -- or other herb
- 1/2 pound mushrooms -- cleaned and halved
- 2 tablespoons parsley -- minced
Preparation:
- Brin lemon juice, water and seasonings to boil in a small pot. Add mushrooms, cover and simmer 3 min., or till mushrooms seem slightly cooked. Remove from heat and cool in liquid. Drain and toss with parsley.
