Mexican cheesecake
Ingredients:
- 2 8 oz cream cheese, lite
- 2 cups share cheddar cheese
- 2 cups sour cream
- 3 eggs
- 2 packages taco seasoning mix
- 1 4 oz can green chiles
- 1 cup chunky salsa -- can use 2 cups
Preparation:
- Combine softened cream cheese and shredded cheddar cheese and beat till fluffy.
- Add 1 cup sour cream and taco seasonings.
- Beat eggs, one at a time and add.
- Fold in chopped and drained chilies.
- Put in springform pan. Bake 350 degrees 35 to 40 minutes. Let cool 10 minutes. Top with remaining 1 cup sour cream. Return to oven for 5 minutes. Cool. Before serving, spread on drained salsa. Serve with your favorite crackers or chips.
