Tzatziki
Ingredients:
- 2 tbsp olive oil
- 1 tsp white wine vinegar
- 2 garlic cloves -- peeled and crushed
- 16 oz plain yogurt -- should be thick
- 1 med cucumber -- peeled and diced
- 2 tbsp mint -- (fresh) chopped
- salt
Preparation:
- Place oil, vinegar and garlic in a bowl and beat lightly with a fork. Add yogu rt and salt and continue to beat lightly until well blended. Mix in the cucumber and the mint and lightly chill before serving.
