MOCK CRAB CAKES

Ingredients:

• 2 c Grated zucchini
• 1 c Italian bread crumbs
• 2 Eggs, beaten
• 1 tb Mayonnaise
• 1 t Crab spice or to taste
• Grated onion, optional
• Grated celery, optional

Preparation:

• Grate zucchini. Mix all ingredients together. Fry in skillet until browned on both sides.
