Festive Nachos
Ingredients:
- 1 1/2 Lb. lean ground beef
- 1 Large onion -- diced
- 1 Can green chilies -- diced
- 1 1/2 C. shredded Jack cheese
- 1 1/2 C. shredded Cheddar cheese
- 1 C. taco sauce
- 2 Cans refried beans -- (1 lb.)
- Topping Ingredients:
- 1/3 C. chopped onions
- 1 C. pitted olives -- chopped
- 1 Recipe avocado dip
- 1/2 C. sour cream
Preparation:
- Fry ground beef and onions until light brown.
- Spread refried beans in a 9 x 12-inch pan.
- Top the beans evenly with the ground beef, chilies and shredded cheeses.
- Drizzle taco sauce over top.
- Bake uncovered for 25 minutes in a 350 degrees oven. Quickly garnish with the topping. Mound avocado dip in center. Spread sour cream around the center. Sprinkle on onions and olives. Serve with 6 to 8 cups corn chips.
