Bruschetta in a Classic Method
- 2 lg Good quality bread- toasted
- Cut clove of peeled garlic
- About 1/2 cup very thinly-sliced
- Mushrooms- or roasted-eggplant
- Or chopped fresh tomatoes
- Extra virgin olive oil
- Salt and freshly ground black
- Chopped parsley
- Right after toasting, rub the bread with garlic and cover it with mushrooms.
- Drizzle with oil, season with salt and pepper and garnish with parsley.
