Brie with Caramelized Pecans
Ingredients:
- 2/3 c Brown Sugar
- 1/3 c Water
- 1/2 c Heavy Cream
- 4 tb Unsalted Butter
- 1/2 c Spiced Pecans
- 1 8" Wheel Ripe Brie Cheese-
- -top rind cut off evenly
Preparation:
- Combine the brown sugar and water in a heavy-bottomed saucepan and bring to a boil.
- Continue to cook over medium heat until the mixture reaches soft-ball stage (240øF.)
- Test with a candy thermometer about 4 minutes from the time the mixture begins to boil.
