Jamaican Ginger Beer
Ingredients:
- a few drops Bitters
- 192 cl Water
- 1 cake of Yeast
- 15 cl ginger
- 6 cl Honey
- 6 cl Lime Juice
- 1 Egg
- 72 cl Sugar
Preparation:
- Combine the ginger, sugar, honey, water, and lime juice in a large pot.
- Add the yeast and the egg white, stir to blend. Allow to stand in a cool, dark place for several days. When ready, strain through cheesecloth, add more sugar to taste, plus bitters. Bottle and refigerate until ready to use.
