Pineapple Salsa Salad
Ingredients:
- 8 oz can pineapple slices, diced
- 15 oz can black beans, drained and rinsed
- 3 scallions, sliced
- 1/4 cup low fat Italian dressing
- 2 tbs chopped cilantro
- 1 small jalapeno, seeded and minced
- zest and juice of 1 lime
- 1 clove garlic, peeled and minced
- 1/4 tsp ground cumin
- leaves of 1 head of radicchio
Preparation:
- In bowl, combine all ingredients.
- Spoon onto radicchio leaves placed on serving platter
