Mashed Potato Salad
Ingredients:
- 4 to 5 large potatoes
- 1/2 cup cream
- 2 large spoons mayonnaise
- 3 large eggs, hard boiled
- 2 heaping teaspoons mustard
- 1 medium onion, finely chopped
- Salt and pepper to taste
Preparation:
- Peel potatoes, cube in large pieces and cook until soft.
- Drain well and mash as for mashed potatoes.
- Set aside.
- Chop eggs and onions Add cream, mayonnaise and mustard to potatoes and stir in eggs and onions.
- Add salt and pepper to taste.
- This may be served hot or cold
