Mixed Green Salad With Dijon-Tarragon Dressing
Ingredients:
- 1 head romaine lettuce
- 2 heads boston lettuce
- 2 cups escarole -- or chicory greens
- 4 tablespoons lowfat mayonnaise
- 4 tablespoons nonfat yogurt -- plain
- 4 tablespoons dijon mustard
- 4 tablespoons tarragon
Preparation:
- Rinse greens, pat dry and tear into bite-size pieces.
- Place in a large bowl.
- In a separate bowl, whick together remaining ingred.
- dor dressing.
- Just before serving, pour dressing over greens and toss until evenly coated.
