Thai Chicken Fettucine Salad
Ingredients:
- 1 cup picante sauce
- 1/4 cup chunky peanut butter
- 2 tablespoons honey
- 2 tablespoons orange juice
- 1 teaspoon soy sauce
- 1/2 teaspoon ground ginger
- 6 ounces fettucine -- cooked
- 3 chicken breasts -- cut in 1" cubes
- 2 tablespoons vegetable oil
- 1/4 cup cilantro -- optional
- 1/4 cup peanuts -- halves
- 1/4 cup red bell pepper -- thinly sliced
- green onions -- sliced
Preparation:
- Combine picante sauce, peanut butter, honey, orange juice, soy sauce and ginger in small saucepan.
- Cook and stir over low heat until blended and smooth.
- Reserve 1/4 cup pic sauce mixture.
- Toss remaining picante sauce mixture with hot, cooked fettucine.
- Cook chicken in oil in large skillet until browned and cooked through about 5 minutes.
- Add rest of picante sauce mixture.
- Cool to room temperature before serving.
- Serve with additional sauce.
- Garnish with cilantro, onions, peanuts, red bell pepper.
