basil oil
Ingredients:
- 1 cup basil leaves -- tightly packed fresh
Preparation:
- 2 cups olive oil
- in large pan of boiling salt water, blanch the basil for 5 seconds. drain
- and rinse with cold water. in food processor blender, puree the blanched
- basil with 1/4 cup of the oil and process until well blended and smooth.
- with the machine on, add the remaining oil and p rocess until well blended
- and smooth. transfer to a glass jar and let stand at room temperature for
- at least 24 hours. carefully pour off the clear green oil, leaving the 6 ts
