Salsa de Tomatillo
Ingredients:
- 1 large can tomatillos - drained -reserve liquid or you can
- use fresh if you are up for cooking them)1 small onion -
- chopped
- 1 cup cilantro - chopped
- 3 jalapenos - minced
- 1 can chopped green chiles
- salt & pepper to taste
Preparation:
- 1 1/2 cups liquid - water or tomatillo liquid
- 1. Drain tomatillos. Reserve liquid.
- 2. Place in food processor or blender. Blend.
- 3. Add onion, cilantro and jalapeno and blend.
- 4. Add liquid and salt/pepper.
- 5. Refrigerate.
- Comments:
- Holds for up to 1 week. Use with chips, tacos,nachos etc.
- Heat it for a great sauce on enchiladas.
