Merciful Habanero Sauce
Ingredients:
- Enough (50/50) white and cider vinegar to fill a table cruet
- (use room-temperature vinegars).
- Two (yes, TWO!) stemmed, coarsely chopped (but not seeded)
- fresh Habanero chiles.
Preparation:
- 1/4 tsp coarse sea salt.
- Simply pour the vinegars over the chopped chiles (which
- should
- fill the cruet about half-way) & salt, and allow to steep at
- room temperature for several days, shaking things up every
- day or so.
- Comments:
- Made in small batches, spoilage problem at room temperature
- just
- don`t seem to happen.
- Excellent on things like black-eyed peas, greens, and - for
- the purist - just plaine sprinkled on a crisp soda cracker.
- Although there eventually is little doubt left that you are
- dealing
- with habaneros, all right,
- The sauce is strikingly gentle for anything so composed, and
- the
- first (and lingering) impression it leaves in your mouth is
- the
- essence of the sweetness and fruitiness of the chile, not
