Cream of Celery Soup
Ingredients:
- 1 1/2 cups Chopped celery
- 1/3 cup Chopped onion
- 1/2 teaspoon Salt
- 1 cup Water
- 2 1/2 cups Milk
- 1/2 cup Milk
- 3 tablespoons All-purpose flour
- 1/2 teaspoon Salt
- 1/8 teaspoon White pepper
- 2 tablespoons Butter
Preparation:
- Cook 1 1/2 cups chopped celery, 1/3 cup chopped onion, and 1/2 teaspoon salt in 1 cup water, covered, about 15 minutes or till tender.
- Do not drain.
- Add 2 1/2 cups milk.
- Blend 1/2 cup milk, 3 tablespoons all-purpose flour, 1/2 teaspoon salt, and 1/8 teaspoon white pepper, add to celery mixture.
- Cook and stir till bubbly.
- Stir in 2 tablespoons butter.
- Season.
