[26] Om te bereyden verckens peynskens Neempt [27] verckens peynsen ende brait die op een ruester Dan [28] snijtse al in cleynen stuckerkens ende doetse in eenen [29] pot Ende neempt aiuyn dye seere cleyne ghesneden [30] es dien doet sieden Als dyen ghesoden es soe doeten [31] inden pot daer die verckens peynsen inne sijn. Dan [32] neempt caneel/ ghymbere/ cleyncruyt/ ende sofferaen [C4v] om hem goede verwe te gheuen. Dese specien suldy [2] minghelen met azijne. dan doeghet al tsamen sieden [3] doeter oock inne wat souts.

[26] To prepare pigs' tripe. Take [27] pigs' tripe and roast it on a grid. Then [28] cut it in small pieces and put them in a [29] pot. And take onion which has been cut up very small [30] and put it to boil. When it is boiled put it [31] in the pot where the tripe is. Then [32] take cinnamon, ginger, cloves and grains of paradise, and saffron [C4v] to give it a good colour. You shall mix these spices [3] with vinegar then put it all to boil together; [3] also add some salt.
