[9] Om pasteyen van gansen te bereyden. Neemt [10] gansen ende ontleet die al in stucken Dan neempt in [11] den saysoene als men boonhauwen vynt van dyen [12] nieuwen boonen die siedet Dan legtse in dye pasteye [13] met ghecapten specke Dan neempt voer v specyen [14] cleyncruyt ende sofferaen

[9] To prepare pies of geese. Take [10] geese and cut them all up into pieces. Then take in [11] the season where one finds [fresh garden] beans some of these [12] new beans; boil them. Then lay them in the pies [13] with chopped bacon. Then take for your spices [14] cleyncruyt [cloves and grains of paradise] and saffron.
